Pineapple Pie

This unique pie has a soft bread crust with a smooth sweet pineapple filling. You have to try this one out!

Filling:

    •    2 1/2 cups fresh pineapple puree
    •    3/4 cup sugar
    •    1 tbsp butter
    •    3 tbsp cornstarch
    •    1 tbsp lemon or lime juice

Crust:

    •    3 cups all-purpose flour
    •    3/4 cup sugar
    •    1 tsp baking powder
    •    1/2 tsp baking soda
    •    1/4 tsp salt
    •    1 tsp lemon juice
    •    1/3 cup ghee
    •    1/2 cup plain yogurt

First peel and chop the fresh pineapple and place the chunks in the blender.

Blend only a little bit. You can leave in small chunks of pineapple.

Add the pineapple puree into a large pot including all remaining filling ingredients.

3/4 cup sugar
1 tbsp butter
3 tbsp cornstarch
1 tbsp lemon or lime juice

Begin cooking on medium flame. When it begins to boil, cook for about 5 minutes and then turn the flame off.

You will notice that the mixture begins to thicken. Now set aside and allow to cool while you are preparing the dough.

First preheat the oven to 350F/180C. For the dough, add all the dry ingredients into a mixing bowl. Mix everything together very nicely.

3 cups all-purpose flour
3/4 cup sugar
1 tsp baking powder
1/2 tsp baking soda

Then add the remaining wet ingredients.

1 tsp lemon juice
1/3 cup ghee
1/2 cup plan yogurt

Mix it all together using your hands until you have a nice dough. If the dough is too dry then add a little more yogurt until you have this consistency. Now separate the dough into two pieces.

Oil your baking dish with a generous amount of ghee.

Place one part of the dough onto the oiled baking pan and press the dough to form the bottom crust of the pie.

Now time to add the pineapple filling. Begin pouring all the pie filling on top of the first layer of dough.

Next flour your counter surface with flour and place the second piece of dough on top. Flour your rolling pin and begin to roll the dough out to the size of the baking dish. We want to cover the pie with this dough.

After you have formed the shape of the pie, begin to roll the dough up onto your rolling pin being sure to flour the dough really well on both sides. Be careful because the dough can break. If the dough breaks just start over by rolling the dough into a ball again and reshaping.

Now unroll the dough onto the top of the pie being extra careful.

Now press the sides into the baking pan, sealing the sides. Bake for 1 hour at 350F/180C.

Now put a coating of ghee on top of the pie and then let it cool.

Once the pie is cooled, frost some powdered sugar on top using a colander. The colander is used to evenly sprinkle the powdered sugar instead of using your hands.
