Lime Cake with Creamy Sweet Avocado Frosting

You might be thinking, Avocado frosting? Believe me, it is wonderful! Avocado makes an amazing creamy frosting, and you can’t even taste the avocado! A must try!

Cake:

    •    1 3/4 cup flour
    •    1 tsp baking powder
    •    1 tsp baking soda
    •    1/2 cup sugar
    •    1/3 cup ghee
    •    1 1/4 cup plain yogurt
    •    3 tbsp lime juice
    •    zest of 1 lime

Frosting:

    •    1 medium avocado
    •    1 tsp lime juice
    •    zest of half lime
    •    1 cup powdered sugar

Note* This cake recipe is for one single cake. If you want to make a double layered cake, like I did in the photo, then just double this recipe.

Preheat oven to 350F/180C. For the cake batter, add all the dry ingredients into a mixing bowl.

In a separate bowl add all the wet ingredients.

Now combine the wet into the dry and mix together until all is combined nicely with no lumps.

Here is the cake batter ready to pour into the baking pan.

Oil the baking dish with ghee.

Now bake in the oven for 30-35 minutes. You will know it is done when you poke a knife in the center of the cake and it comes out dry.

Here is what they look like when you take it out of the oven.

Now time to prepare the frosting. Add all the ingredients into a mixing bowl.

Blend all together with a hand blender.

Blend about 3 minutes.

Before frosting the cake, make sure that it is completely cooled. When cool, frost the top of the first cake.

Spread the frosting all around.

Then place the second layer of cake on the first cake.

Now finish frosting the cake and you are done! Now you are ready to offer to Kṛṣṇa with love and devotion!
