Candied Sweet Potatoes
This side dish is almost like a dessert! Extremely yummy!
• 3 medium sweet potatoes
• 1/2 cup unsalted butter
• 1 cup jaggery or brown sugar
• 1/2 tsp cinnamon
• 1/2 tsp ground nutmeg
• 1/2 tsp salt
First preheat the oven to 190C or 375F. Then in a saucepan add the butter, sugar, cinnamon, nutmeg and salt. Cook on medium heat until all the sugar is dissolved. Then turn off heat and set aside.
Next, peel the sweet potatoes and cut crosswise in 1/4 inch rounds. Make sure to keep the whole potato together and place in a baking dish. When all the sweet potatoes are in the baking dish, pour the hot sugar mixture over the potatoes. Try to cover the entire surface area of the sweet potatoes.
Now cover the baking dish with aluminum foil and place in the oven for baking. Bake for 30 minutes or until the sweet potatoes are tender when pierced with a fork. Then remove the foil and bake for another 10 more minutes until it candies a little on the top leaving a golden brown color.
Let sit for 15 minutes before serving and you are ready to offer to Kṛṣṇa with love and devotion!
